I am 25 years old, married and a proud father of 2 girls. I am a locomotive engineer on a short line railroad operating in Chicagoland and Northwest Indiana. I also serve as a Vice Local Chairman for the Brotherhood of Locomotive Engineers and Trainmen, local 682. I was a chef for 3 years before making the career change and will someday own my own restaurant. In addition, I assist my wife with her home based wellness education business. I write songs and poems in my free time and collaborate with many talented musicians in the Chicagoland area. Perhaps one day you will hear one of my songs on the radio.
There are so many foods I love, I hope that I never have to decide what the last meal I'll ever enjoy would be. That aside, I suppose a sort of seafood plate done in extravagant fashion seems the most appealing. I would want lobster tails and claws poached and sliced with maybe a wasabi cucumber sauce, grilled sturgeon with a roasted pepper butter, some steamed mussels with a tomato saffron broth, a couple of raw oysters with tapatio sauce, and some crab stuffed shrimp with a creamy lobster sauce.
