Born and raised in a tiny mountain town in the Sierra Nevada mountains in California, my journey has taken me all over the globe. I'm now settled in my favorite place, the Cayman Islands with my English husband, 2 lab mix dogs and 2 yorkshire terriers. I'm a child of the 60's with an Auntie Mame approach to life. I'm a hypnotherapist, behavior therapist and gourmet cook. Somewhere in there I find time to work and write.

There are few dishes that will invoke more controversy than Chili. The most flammable of which is the no beans versus beans debate. However I've come up with a reasonable compromise for the beans versus no beans, I cook both at the same time in two separate chili pots. There's not that much more work involved and the extra effort winds up making everybody happy (especially when I'm in my vegetarian mode which is most of the time.
