There's nothing better than a nice hot bowl of soup on a cold winters night to help warm you up. I also find soup to be a great comfort food and not only when I am sick but even after a long and tiring day.
Loaded Potato Soup:
3 and 1/2 lbs. of white potatoes (or your favorite variety) peeled, cleaned, and diced into cubes about 3/4 inch.
1/2 cup butter
3 cloves of garlic, roasted and minced or you may use 1 tsp. of garlic powder. The roasted garlic definitely give the soup a richer flavor.
1/2 to 1 tsp. black pepper
Salt if needed to taste
4 and a 1/2 cups of chicken...
