Recipes: Deviled eggs

My family loves deviled eggs and they are always requested whenever we have a get together. Well, I like to try new and different ways to make them so here are a couple of our favorites. It dosn't seem to matter what the occasion is, deviled eggs are always requested. All three of the grandkids love them too. There are never any left of either of these recipes

SMOKED OYSTER STUFFED DEVILED EGGS

1 3 3/4 oz can of smoked oysters
9 hard boiled eggs
6 tbsp of mayonnaise
2 tbsp snipped chives
1 tbsp dijon mustard
1/4 tsp freshly ground pepper

Drain oysters, pat with paper towel to remove oil. Then coarsely chop the oysters.

Cut the boiled eggs in half lengthwise. Carefully remove the yolks, set the whites aside. Place yolks in a bowl, mash. Add mayo, 2 tbsps chopped chives, mustard, pepper, and chopped oysters. Mix well.

Spoon egg mixture into whites. Garnish with snipped chives.

These are kind of different but always goes over well. If you don't know for sure, always ask if somebody is allergic to seafood. I feel sorry for anybody that cannot eat oysters but there are some people who can't.

The next one is for the people who like things a little spicy. If you don't like horseradish, you can use a small jalapeno very finely diced. You can also substitute crab or lobster for the shrimp.

ZESTY DEVILED EGGS

6 hard boiled eggs
1/2cup finely shredded cheese
2 tbsps chopped fresh parsley
3 tbsp mayonnaise
1/2 tsp ground mustard
1 tsp prepared horseradish
1/8 tsp salt
1/4 tsp ground pepper
1/2 lb of tiny cooked shrimp

Boil eggs. cool and peel the eggs. Cut in half lengthwise. Put the yolks in a bowl and mash with a fork. Mix yolks and the remaining ingredients.

Fill the egg whites with the egg yolk mixture heaping it slightly. Garnish with cooked shrimp and paprika.

These recipes are both very tasty and a little different than ordinary deviled eggs. Both recipes can easily be doubled or tripled for the BIG get together.
