Go to any party where athletics is involved and there are two common ingredients Hot wings and cheese balls. I have had cheese balls at wedding receptions, officer installation dinners, and most any place that people gather and get together for a snack. Cheese balls always seem to be there. Maybe that is because most everybody loves cheese and there are so many ways to make cheese balls to satisfy any taste.
This is a recipe that I have come up with from several other recipes and it never fails to be a big hit wherever I take it for whatever occasion. If You prefer some other cheeses to the one's I use, be adventurous and experiment till you find the combination you like.
PAPPY'S CHEESE BALLS
2 1/2 pounds of cream cheese
2 1/2 pounds of sharp cheddar cheese
1/4 pound of bleu cheese
1/4 pound Gorgonzola cheese
2 tbsp Worcestershire sauce
1 tsp liquid smoke sauce
1/4 cup bacon bits
2 tbsp chopped chives
1/2 cup mayonnaise
10 drops of Tabasco Chipotle Pepper sauce
Garlic salt and Onion salt to taste
Chopped pecans
Thoroughly mix all the ingredients except the pecans. Shape into three balls and then roll in the chopped pecans. Chill until firm and ready to serve.
If you feel real ambitious you can make a double batch and these freeze very well and keep for three months really well. Make them ahead and have them ready when company drops by. Or you can change the cheeses and spices and put different meats and things in them. Get adventurous and create the one you like best.
These are really great served with your favorite cracker like wheat thins or what ever you like. Bagel chips work well too. Use your imagination and have fun.
