Recipes: Chicken and rice

There is nothing like a lean cuisine that is easy to make and that tastes good and is good for you. The following I learned from my mother, but I did not watch her well enough; however my Chicken Adobo turned out better than hers in the opinion of those who have had both her Chicken Adobo and mine.

THINGS YOU'LL NEED:
Boneless, Skinless Chicken

1 Cup Soy Sauce
1 Cup Red Wine Vinegar
1 Cup Orange Juice
About eight peppercorns
A few bay leaves
One whole garlic (not just a clove)
Slice Bell Pepper (Optional)
Other vegetables (Optional and experiment)
Rice

Step 1:
Take a rock and pound the garlic. Remove the skin and unusable parts like the hard center stem. Crush the garlic into a paste. Take a spatula and scrape the garlic paste into the pot.

Step 2:
Put the chicken in the pot along with the soy sauce, Red Wine Vinegar, Orange Juice, peppercorns, bay leaves, and other ingredients. Turn the fire on high to get it to boil for 20 minutes.

Step 3:
I prefer to use Parboiled Rice. It seems to taste better to my wife and me. Many people prefer the regular, sticky white rice. Even better is the Mahatma rice. Follow the instructions for whatever type of rice you decide to use. Because I usually use Parboiled rice, for whatever amount of rice I use, I add the same amount of water plus 1/4 more water regardless of how many cups I use. It always comes out right for me.

Step 4:
After boiling for 20 minutes, the Chicken Adobo should be one.

This dish is great with Pansit which is also easy to make, but I'll tell you how to make that when you tell me how this turned out, so let's hear from you!

A FEW POINTERS:
I like using a ladle for the Adobo and a serving spoon for the rice. You'll see why when you make this recipe. Put two serving spoons of cooked rice on a plate and with the ladle add a little juice and a piece of chicken or two directly on top.

You can take some parsley to decorate the plate and/or slices of hard boiled eggs.

This dish tastes even better the next day, so if you wish to make the Adobo tonight and the rice tomorrow and serve reheated, that would be ideal.

You can replace the chicken with stewing beef cubes or pork cubes as well.

For you single men, this is how to win the hearts of the women - through their taste buds... but good luck with the garlic breath.
