The north east coast brings to mind places such as Maine, Nova Scotia and Newfoundland. These are the homes of the lobster fisheries and cold rough seas of the North Atlantic. There are many lobster recipes among the fishing communities and some of the recipes have been handed down from generation to generation. There is one I would like to share with you; it is full of flavor and very nutritional as well.
Lobster salad:
1 lb. fresh lobster meat cooked (imitation lobster meat can be used if necessary)
3 strips of cooked bacon
1 head of romaine lettuce
1 cup of crispy croutons
1/4 cup of grated Parmesan cheese
1/2 tsp freshly ground pepper
1/2 fresh lemon or 2 tbsp. lemon juice
1/4 tsp crushed dried red peppers (optional)
Directions:
Wash and pat dry romaine lettuce. Place into a large salad bowl.
Break up the lobster meat with a fork and add to the lettuce.
Break the cooked bacon into pieces and add to the lobster meat.
Add the Parmesan cheese, black pepper, and lemon juice and dried red peppers.
Mix together well, then add the croutons. Sprinkle with Parmesan cheese and garnish with lemon wedges.
A one of a kind salad.
