A beginner's guide to Wiccan spells and rituals

A beginning wiccan should always read several good books with information on these subjects and gain a thorough knowledge of them before attempting either.
In order to achieve the desired effect with these things, a strong foundation of knowledge is essential.

Spell casting can be considered both a fine art and a metaphysical science.
A spell of course cannot do crazy things like turning someone into a frog or turning water into wine and such. Common types of spells are more along the lines of helping to heal illnesses, increasing prosperity in your life, and things like that. It works based on the like-attracts-like principal, and the metaphysical law that physical existence begins in the non-physical, or astral plane. Create your desired effect around yourself in the astral in such a way as to cause it to also manifest itself in reality. To do this, one generally uses colors, symbols, herbs, items, candles and such which correspond to the purpose of the spell in conjunction with words, and often actions, and raises metaphysical energy to create a thought-form in the astral which will then manifest into the physical world.

It is best to write your own spells, and if you are going to use one written by somebody else, you should try to change something about it [say, swap one herb for another of the same correspondence, or something] in order to make the energy your own. Also, one must never cast a spell aimed at harming somebody else, or manipulating their will. You don't want to bring bad things upon yourself! It is also essential to be very careful of your wording, and to use a spell-binder to prevent the spell reversing and other things.

Wiccan rituals are religious ceremonies performed for various reasons, some examples would be celebrating a sabbat or esbat, performing important magic, or simply as an expression of love/worship of the God and Goddess.
Those who belong to a particular wiccan tradition often have pre-written rituals unique to th tradition which is followed. Some covens also already have pre-written rituals which they follow. For the beginning eclectic solitary, it is often necessary to choose a ritual somebody else has written, or write one yourself [the latter, I think, is the better option, but takes considerable knowledge and experience]
The events of a ritual depend on the tradition, coven, or person/s involved. Some use more or less of these than I'm listing, and each thing is often done differently by different groups
