Spanish Rice Recipe From My Foods 9 class. This dish is very delicious. Even with just a green salad.
1/2 cup raw long grain rice
1/4 cup chopped celery
1/2 medium onion, chopped
2 tablespoons chopped green pepper
1/4 pound ground beef
1/2 tsp salt
1 tablespoon butter
1/4 cup grated cheddar cheese
1 can sliced mushrooms
Dash of Pepper
3/4 cup canned tomatoes or 1/2 that amount of tomatoes plus water to make 3/4 cup
Preheat oven to 350 degrees. Butter small baking dish. Cook rice by cooking directions.
Melt butter in frying pan. Cook veggies in frying pan until tender (5 Min's)
Add meat and seasoning. Cook until meat is browned.
In separate saucepan, heat tomatoes. In buttered casserole dish, layer rice, meat, rice, meat and rice.
Pour tomatoes and juice over lightly. Cover. Bake about 30 minutes. About 5 minutes before serving, top with grated cheese. Heat until bubbly.
Variation: I like to grate a bit more cheese and add within the layers.
