Ingredients:
MANGO SALSA: (Serves 2-4)
2-4 tsp. or more Thai sweet chili sauce (easily purchased at your local grocery or Asian/Chinese food store)
handful of fresh coriander (about 1/2 cup), roughly chopped
1 Tbsp. fish sauce (depending on how salty you like it)
2 fresh ripe mangoes (mangoes are ripe when fragrant and easily indented - see more on mangos below)
2 cloves garlic, minced
1 Tbsp. lime juice
1 tsp. sugar (can be omitted if mangoes are very sweet)
FISH:
2-4 fresh halibut steaks (or other fresh fish, such as salmon steaks)
2-4 Tbsp. fish sauce (1 Tbsp. for each steak)
1-2 Tbsp. fresh lime juice (about 1/2 Tbsp. per steak)
1-2 tsp. freshly ground black pepper (about 1/2 tsp. per steak)
