Do you want to encourage healthy eating in your children, but still provide them with an occasional treat? Here is a delectable but very healthy oatmeal cookie recipe that my family devours.
Whole Wheat and Honey Oatmeal Cookies
1/2 cup omega enriched margarine
1/4 cup honey
2/3 cup packed brown sugar
1 omega enriched egg
1/2 teaspoon vanilla
1 cup whole wheat flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 cup quick cooking oats
1/4 cup chopped walnuts
6 oz. semi-sweet chocolate chips
In mixing bowl beat margarine for 30 seconds and add brown sugar and honey, and beat until fluffy. Add egg and vanilla, and beat well. Add dry ingredients beating until well-combined. With a large spoon, stir in oats, walnuts and chocolate chips. Drop by teaspoonfuls on an ungreased cookie sheet. Bake in a preheated 375 degree oven for 10 to 12 minutes. Serve with a cold glass of milk, and enjoy! Makes 24 large cookies.
