Mother's Day: Gifts and activities to make Mom feel special

Brunch is one of my favorite activities for Mother's Day. It's nice to take Mom out to a restaurant for brunch on her special day but she'll be even more impressed if you set a pretty table and make her a delectable brunch at home. This doesn't have to be a difficult task, nor time consuming, as you will see from the ideas and recipes I am going to give you here.

The night before set the table with your prettiest china or stoneware. Of course you have a linen tablecloth! If not, anything pretty will do, you can even use a clean, floral or other nicely patterned bed sheet, crisply starched and ironed for the occasion. After setting the table add a vase of fresh flowers, tulips are easy and inexpensive. They can usually be purchased in your supermarket while you are shopping for all the other necessities for the brunch. An especially nice gift for Mom would be to put some of her favorite flowers in a vase she can take home.

Baked Pecan French Toast

Fresh From the Bakery pastries, rolls, or whichever your mom prefers.

Fresh Berry Mix and Cantaloupe
This is simple. The day before purchase an assortment of berries at the market. I suggest a combination of strawberries, black berries and raspberries. Also buy a fresh cantaloupe or two depending on how many people you are serving. Early in the morning, wash the berries and peel and slice the cantaloupe into wedges wide enough to be able to spoon the berries over them. It's a nice touch to add a little homemade whipped cream if you want. Whip heavy cream with a touch of sugar until stiff. If you insist on using canned whipped cream, skip it.

Baked Pecan French Toast
Beat 8 or so eggs with light cream or whole milk. Add cinnamon and a touch of allspice. Next slice French Bread, the type that is long and narrow and has a crispy crust, in to slices approximately an inch to one and a half inches wide. Pour the egg mixture into a greased 9 by 13 inch glass baking dish. Spread the sliced bread to cover the mixture and then turn them over, so they are covered in the eggs and cream. Take approximately two cups of chopped pecans and sprinkle over the top of the slices of bread along with some brown sugar and cinnamon and bake at 325 degrees until they are golden but be careful not to over bake. You're going to have to watch them, sorry.

Maple Baked Ham
Just purchase your favorite smoked ham at the store. Add cloves to the top of the ham by inserting approximately every inch or so. Put about half an inch of water in the pan you are using to bake the ham in; generously bast with a thick Maple Syrup every so often for as long as the ham packaging tells you, usually about an hour and a half at 325-350. You can do this before making the Pecan French Toast and then warm it for 10 minutes before serving.

Pink Champagne Mimosas
Buy whichever Pink Champagne you can afford. Pour the Champagne in to proper Champagne glasses or Martini glasses. Add orange juice being careful not to overtake the pink color of the champagne too much. Float some of the berry mix on top.

There you go - a simple but delicious homemade Mother's Day Brunch that is easy and full of love for Mom on her special day!
