During the same period in Naples happens you start to use the mozzarella. A Neapolitan pizza, Raffaele Esposito and his wife prepared the famous pizza with tomato and mozzarella in honor of Queen Margherita, wife of King Umberto I of Italy.

At this point, cover the dough with a damp cloth and let rise until it has doubled its volume. It is necessary that the oven is the first to fire predgreje pizza.

While the oven heats, stretches the dough in a tin, previously greased with oil, and decorate if you want a crispy pizza immediately put in the oven, but if you want a pizza higher and softer the increase in leave pan covered with a damp cloth again for about an hour of time.
In the oven of the house, which, unfortunately, does not reach high temperatures, pizza cooking requires a total of 20 minutes and should cook it first with tomato and after only 15 minutes, remove from oven and add mozzarella, stuffing you want and put everything in the oven to complete cooking.
