Summer Pasta Toss

Ah, spring is here and summer is on its way. It's time to start thinking about those relaxing, mouth watering bar-b-Que's. You have selected your meat, you know that you are going to have that yummy, farm fresh corn; but you need something else, and you aren't in the mood for traditional pasta salad. How about this delicious, version of a staple bar-b-Que side dish?

4 oz. bow tie pasta (pasta choice may vary)
3 oz. chunk light tuna*
2 tablespoons light mayonnaise
2 cups chopped walnuts
2 cups dried, sliced cranberries
1/8 tsp. garlic powder
4 shakes pepper
4 shakes salt

*Tuna may be substituted for canned chicken, or, you can go meatless.

Boil pasta to your desired softness. Drain and run cold water over to cool. As pasta cools, drain tuna and place 3 oz. in a bowl. Once pasta has cooled, combine pasta, tuna and all other ingredients. Mix until pasta is evenly covered in mayonnaise and all other ingredients are equally distributed. Cover and cool in refrigerator for at least 2 hours before serving. Note, if made a day ahead, the flavors have an opportunity to combine and come out. Serves 6-8. And there you have it, a scrumptious twist on a bar-b-Que favorite. Bon-a-petite!
