them going! Other herbs, particularly the perennial ones, can be planted from slips. Always select a piece that does not bear flowers, and that is not too woody nor too slim, and also be sure that it is not too long or too short: about 4 inches long is usually about right. I like to put the slips into a glass of water for a few day before planting, and then plant them in a pot or piece of soil that I am sure that I will keep damp by watering every single day, until I see new leaves forming. After a couple more weeks, your new plant can be transplanted, if you haven't yet put it in its final spot.

Otherwise, even in hot and dry climates, most perennial herbs do not need much watering or care, as they are so robust. Annual herbs may need a bit more cosseting and, in cold climates, will certainly need to be in a greenhouse or in the kitchen. Be sure, though, that they get enough light - and be careful not to overwater them!

With very little effort, you can have a wonderful herb garden, full of goodness, essential oils and flavour. Whether you use them in salads, pies, stews, or marinades, or drink them as tisanes or an exotic addition to a cocktail, you will only have to step out into your garden, or onto your balcony, to harvest their fresh, natural taste.
