Recipes: Leftover chicken or turkey

Chicken or turkey pot pies and chicken or turkey salad are all good ways to use left over chicken or turkey. I like to take a good fresh vine ripened tomato and cut it almost into and in six or eight pieces and then flower it out and cover it with chicken or turkey salad. You know that if you will either get out the recipe book or get on the Internet you can find some really good and nutritious ways to use leftover chicken and turkey.With the cost of everything getting higher and higher every day, most of us have to use everything and really can't afford to throw away good food. With the push to cut down on red meat consumption, our family uses a lot of chicken and a really tasty way to use left over chicken is to make this tasty chicken loaf. It uses up your leftover chicken and if you are tired of chicken at the time, go a head and make this and put it in the freezer for a quick easy supper some night when you really don't feel like cooking. You can add various different spices to give it a different taste. We enjoy this at least once a month and it is good and inexpensive to make.

CHICKEN LOAF

4 cups cooked, finely chopped chicken
2 cups bread crumbs
1 cup cooked rice
1 small can diced green chilies
1 1/2 tsp salt
3 cups milk or chicken broth or combination
4 eggs, well beaten

Mix all the ingredients and place in a 13 X 9 baking pan or a nice big loaf pan. Bake at 325 F for 1 hour. There are many good things to top the loaf with or it is good plain.

We like to top it with blue cheese crumbles a few minutes before we take it out. Other cheeses can be used or saute up some fresh mushrooms and make sort of a mushroom gravy to go over it. You can also saute onions and combine them with the mushrooms or use them separately

This freezes very well and is a great quick supper when you are in a hurry and wonder what to fix. There is one or two in my freezer most of the time. I like to use chicken or turkey that I have smoked on the smoker. Gives it a really good flavor. Serve with mashed potatoes if you like a lot of starches or witth a good green tossed salad.
