YOGURT CAKE WITH COFFEE FLAVOUR
If you want wholesome food for breakfast or morning/afternoon breaks, you can quickly and easily bake your own yogurt ring shaped cake.
It will not take more than 10 mins to prepare it and only 30 mins to bake it.
Just follow this great recipe.
Here you can use always 1 cup of yogurt (125 gr= 88.34 oz) to weigh your ingredients
INGREDIENTS
1 cup (of yogurt) of the desired flavour;
2 cups (of yogurt) of white sugar;
3 cups (of yogurt) of 00 flour;
1/2 cup (of yogurt) of extra virgin olive oil;
1 dose of baking powder for cakes (16 gr= 11.31 oz);
3 eggs;
some butter or waxed paper.
OPTIONAL ADDITIONS
- chocolate drops
- sesame seeds
- icing sugar
- whatever else you want
METHOD
Take a big bowl and put 1 cup of yogurt inside, wash it and use it again to add 2 cups of white sugar and mix.
Wash it again and use it to add 3 cups of 00 flour, sieving it with a strainer and mixing with vigour so that you do not have lumps, the dough will start to become a bit hard to mix, but go on.
Wash again the cup of yoghurt and use it to fill 1/2 of it with extra virgin olive oil, then add it to the dough and mix.
Now add 1 dose of baking powder for cakes always sieving it with a strainer and mixing with vigour like you did previously with the flour, then add 3 eggs and mix again until the dough have a bright and homogeneous colour.
Take a baking pan for cakes and grease it with butter or simply cover it with waxed paper, pour the dough and roll it out.
Here you can add what you want as optional additions (see my list under the ingredients).
Put the baking pan into the pre-heated oven at 180C (356F), leave it cook on both upper and inferior parts for 10 minutes, then put the heat only for the inferior part.
After about 30 mins, check if the cake is completely cooked, touching the base with a toothpick, if it is not liquid anymore the cake is ready, otherwise let it in again for 5-10 minutes.
When the cake is cooked, let it chill into the oven until it is cold or cover it with some cleaned dishclothes.
At the end, you are ready to taste it, the cake can be preserved in a paper bag for foods for some days. Enjoy!
