Don't know what to do with that ground beef in your refrigerator? Here is a delicious, extremely easy lasagna recipe that tastes even better the second day. It is the perfect blend of pasta, meat, cheese and spices and will have your kitchen smelling like an Italian Restaurant!
EASY SCHMEAZY LASAGNA
Preheat oven to 375 degrees
1 box lasagna noodles
16 oz. cottage cheese
1 egg
1 1/2 cups grated mozzarella cheese
1 1/2 cups grated Colby jack cheese
1/2 cup grated Parmesan
Sauce:
2 lbs. lean ground beef
26 oz. jar favorite spaghetti sauce
14.5 oz can petite cut tomatoes
1 T brown sugar
1 t garlic powder
1 t ground sweet basil
1 t sea salt
Brown ground beef in large pot over medium heat, and drain. Add remaining sauce ingredients and simmer.
While the sauce is simmering, prepare the noodles in a large pot according to package directions. Drain, and set aside.
Mix the cottage cheese in a small bowl with the egg. Toss your grated mozzarella and Colby jack cheese together in a large bowl with your fingers.
Remove the sauce from the stove and put a few spoonfuls into a 9 X 12 inch baking pan, just to cover the bottom to prevent sticking. Place a layer of lasagna noodles (4 or 5) into the pan. Cover with 1/2 of your meat sauce. Carefully, spoon 1/2 of your cottage cheese mixture over the layer of meat sauce, and top with 1/2 of your mozzarella and Colby jack. Sprinkle 1/4 cup Parmesan on top, and repeat another layer with your remaining ingredients.
Bake in preheated oven for 40-45 minutes. Let stand ten minutes before serving.
Enjoy with a tossed green salad, some crusty french bread and a nice bottle of Chianti!
