Homemade TNT Taco Seasoning Mix

Survivalists and campers are always searching for various foods which have a long life span and does not require special storage precautions. In particular they cherish the various homemade mixes where all you have to do is add a can of this or a can of that. I have included one such mix that I like to keep for emergency use.

I make all my own Taco seasoning, chili seasoning and other dry mixes and never could understand why anyone would use a lot of salt in a spice mix. Should you use salt in one of the mixes keep it at a minimum and do not use either sea salt or kosher salt when you use it. If you are on a low sodium diet you could use some celery seed or dried ground celery in place of the salt and still get the salty flavor without the sodium. I have made this mix without the use of salt for when you add the cheese and the taco sauce you have in effect added salt that was contained in those products.

Here is the recipe for a very good Taco seasoning mix.

1/4 cup of instant minced onion
2Tbsp of chili powder
2 tsp of paprika
2 tsp of dried red pepper flakes
1 1/2 tsp of dried oregano
1/2 tsp of dried marjoram
1/4 tsp of pepper
2 Tsp of cornstarch
1 Tsp of instant minced garlic
1 tsp of ground cumin

Place all of the above ingredients into a glass quart jar and then shake the jar forcefully to enable the ingredients to mix well. Place a label on the jar and store it in a dry, cool place. This finished mixture will last you for about six months. It will make approximately six packages consisting of about 2 Tbsp each. The two tablespoons equals the same as a commercial 1.25 ounce package that you would purchase in a grocery store.

When you are ready to make the filling, begin by browning one pound of lean ground beef in a large skillet. After the meat is fully cooked drain off the grease. Then add 1/2 Cup of water and 2 Tbsp of your ready made TNT Taco Seasoning mix. When the mixture reaches the boiling point, reduce the heat and then cover the pan. Let it simmer for ten minutes stirring it occasionally. This should make enough taco seasoned filling for approximately 10 tacos.
