One very simple and fun appetizer that I've created includes a nifty trick to get kids to eat spinach!
You will need:
-Box of Triscuits
-Cheese; this recipe works with mozerella slices and Boursin garlic cheese spread
-Fresh, raw, rinsed baby spinach leaves
-Good company!
-Serving tray or plate
-Butter knife
First, set out your Triscuits on a plate or baking sheet. Make sure you have plenty!
Next, cut or spread your cheese onto the crackers. If you use a sliced cheese, you could bake or microwave the crackers until the cheese is melted, but you don't have to, and you're good to go if you used a spreadable cheese.
Lastly, cut or fold your spinach leaves and place on top of the cheese.
For more spinach eating, you can add two more leaves, another bit of cheese, and top with another Triscuit.
Everyone I've made these for have loved them, including the pickiest kids I know, ages 8, 10 and 11! It's the only way I've found to get them eating spinach with no objection.
