Chicken Vermicelli Pasta
Ingredients:
1 bag vermicelli pasta
2 boneless chicken breasts
1/2 cup Parmesan
1 cup of olive oil (E.V.O.O)
1 tbsp of red wine vinaigrette
1/2 cup of red wine
20 manzilla olives
1 tbsp of lemon juice
10-15 fresh cilantro leaves
1 tsp garlic salt
1 tsp pepper
1 tsp salt
1/2 tsp of sage
1/2 tsp of basil
1 tbsp of butter
First start off by boiling a large pot of water for your pasta, once the water comes to a boil add you pasta and your salt. Meanwhile start grilling the chicken and mince your olives and cilantro and add them together in a bowl with your red wine and other spices. When the chicken is done you will need to slice it into small pieces.
Just before the chicken is done add the olive oil to a pot at medium heat. Once the pot is warm add you wine mixed with other ingredients and chicken that you sliced up into small pieces.
Once the pasta is done strain it and leave it in pot. After the chicken marinate and the alcohol burn off than the chicken to the pasta and mix it in and take the sauce off of the burner.
To serve pasta, add it to plate and cover with your wine sauce, cover it with Parmesan cheese and garnish with parsley.
