"Mom, I need a food project for Spanish class and it has to be a dessert!"
I glanced up at the dramatic, loud entrance of my high schooler, thinking how little some things change. "Hi to you, too, hon. How was school?"
"I just told you! My Spanish grade is horrible, and a dessert will count as extra credit on my next exam." She put her left hand on her hip, a sure sign of irritation.
"What's your grade?"
"A 90!"
I considered her and smiled. "Well, I can certainly see how that's of concern for you."
Her other hand found its way to her other hip. "So, can you help we with this Spanish dessert project or not?"
"Yes, but," I said in my best Nixon imitation, "I am not a cook."
She didn't smile. "There are probably Spanish mommies like you, who aren't cooks, and aren't comedians, either."
"Hmm ... I guess we could find an easy one on the internet," I suggested, somewhat subdued.
We actually found several easy Spanish dessert recipes on the Web, four of which I'll share with you (just in case you have a teenager in Spanish . And, in case you're wondering, her demeanor did improve, as did her grade in Spanish. She came home with a 94 on her report card.
Fried Milk
1/2 c. sugar
1/2 c. cornstarch
1/4 tsp. ground nutmeg
3 c. milk
1 tbsp. butter
1/4 tsp. grated lemon peel
2 eggs, beaten
3/4 c. dry bread crumbs
Oil
Powdered sugar
Mix sugar, cornstarch and nutmeg in pan. Gradually stir in milk. Heat to boiling over medium heat. Stir constantly, boil 1 minute. Remove from heat. Stir in butter and peel. Spread in ungreased 8 x 8 inch dish. Refrigerate uncovered at least 3 hours.
Cut into 2 inch squares. Dip squares into eggs. Coat with crumbs. Fry until light brown. Drain then sprinkle with powdered sugar.
Whipped Cream Dessert
1/2 c. shortening
1 c. sugar
4 egg yolks
1 3/4 c. flour
1 lg. tbsp. cocoa
3 tsp. baking powder
1 tsp. cinnamon
3/4 c. milk
4 egg whites
Cream shortening, add sugar, egg yolks and beat well. Sift together flour, baking powder, cocoa, cinnamon and add alternately with milk. Fold in beaten egg whites. Bake in 2 greased layer tins 30 to 40 minutes in 350 degree oven.
The following is used as a filling and topping or as sauce served over squares. Fold 4 tablespoons chocolate sundae topping (any brand) into 1 cup whipped cream.
Bizcocho de Yogur
(Yoghurt Sponge)
1 measure lemon yoghurt
3 measures self-raising flour
2 measures sugar
1 measure sunflower oil (olive gives too strong
