Grilled Buffalo Chicken Wraps
Ingredient list:
Tyson or Banquet Frozen Breaded Chicken patties or equivalent
Shredded 4 cheese blend (Mexican works well) or American cheese slices if on a budget
Sour Cream or Creamy Ranch Dressing
8" or 10" Flour tortillas (Larger are easier to wrap but once grilled will stay shut anyway)
Shredded lettuce
Diced tomato
Tappy Bull Louisiana Hot Sauce
Salt
Black Pepper
cooking spray or oil (I use spray canola oil)
Other item:
Paper towels or napkins
I will explain the one at a time method for limited counter space, but you can adjust for larger area and family needs.
Preheat a flat grill or skillet to around 400 degrees with no oil yet. (A George Foreman style grill works great too!) Take the top off of the cooking oil spray and have it near the grill for easy access.
On a microwave safe plate, place the chicken patty on a folded paper towel or napkin.
Microwave on high for 2 minutes and 30 seconds.
During the cooking place a flower tortilla over the chicken for 10 seconds to soften the tortilla.
Place the tortilla on another plate and put a layer of cheese down the center of it.
Next place a layer of shredded lettuce.
Next put sour cream or ranch dressing on the lettuce to taste. The cool lettuce keeps the brunt of the heat away.
Next, add some diced tomato.
Lightly sprinkle the tomato with salt and black pepper. It is very important to the flavor that it goes on the tomato.
Your chicken should now be done. Turn the patty so that you will slice across the shortest side if you are using 8" flour tortillas, or across the long side for the 10" flour tortillas.
Cut the chicken patty into 3 even slices. Place the center slice on the tomato near where you plan for the wrap to be open. place the two end slices together below that one. You should have a fairly uniform chicken coverage.
Season the chicken directly to taste using the Tappy Bull Louisiana Hot Sauce.
If you used shredded cheese, add more cheese on the chicken now. If you used slices, this will not be necessary.
Fold the wrap in classic burrito style.
You will fold the bottom up over the chicken first, take the side closest to you and fold it over next, and lastly bring the side away from you over the last fold.
Pick up your wrap and hold it in one hand.
Spray only the area of the grill that will touch your wrap and place the wrap, fold down, on the oiled surface.
You may use a spatula to apply light pressure if you are not using a George Foreman style grill.
After about 15 to 20 seconds, spray another strip of oil on the unused section of the flat grill and flip over the wrap with the spatula. (George foreman users are done, Enjoy!)
15 to 20 seconds more and you have your wrap!
You may remove ingredients to adjust for children or your own tastes. I find that the complete package is to die for!
