Recipes: Breakfast pizza

Breakfast pizza, a variation of the breakfast casserole, is a easy way to serve a number of people. Combining all of the ingredients of a bacon or sausage and egg breakfast into one pan is definite a timesaver for the hostess.

Breakfast Pizza # 1 (our family favorite)

1 can refrigerated crescent rolls
1 pound bacon
1 pound sausage
8 ounces shredded cheddar cheese
6 eggs

Press crescent rolls on pizza pan for crust. Cook bacon and sausage, set aside. Beat eggs and pour over crust. Sprinkle on bacon, sausage and cheese. Bake at 350 degrees for 15 to 20 minutes.

Breakfast Pizza # 2

1 pound sausage
1 1/4 cups cooked shredded potatoes (or frozen hash browns, thawed)
1 cup shredded cheddar cheese
5 eggs
1/2 cup milk
1/4 teaspoon salt
1/8 teaspoon pepper
Paprika (optional)

In skillet, brown sausage. Drain. Spread in bottom of casserole dish. Top with potatoes and cheese. Beat eggs, milk, salt and pepper; pour over cheese. Sprinkle with paprika if desired. Bake, uncovered at 375 degrees for 30 to 35 minutes.
