As everyone knows, potato salad is the perfect accompaniment to anything barbecued, from burgers to chicken. It is also a wonderful summertime treat for picnics and potlucks.
The recipe below has been in my family for generations. I can remember feasting on it regularly as a child, growing up on the family farm. My mom's potato salad was always the first one consumed at community dinners or family gatherings, because it was always the best. The secret is in the home-made potato salad dressing, which was passed down from my grandmother.
Ingredients:
Salad Dressing:
1 cup Sugar
1 cup Vinegar
1 cup Milk
4 beaten Eggs
2 heaping tsp of Mustard Powder
1 heaping tsp of Flour
1 tsp Salt
1/4 tsp Pepper
Salad:
6-8 Potatoes, peeled
3-4 stalks of Celery, chopped
A dozen radishes, finely chopped
A half dozen green onions, chopped
2 eggs, hard-boiled
Paprika
Instructions :
1. Prepare the potato salad dressing a day in advance. Mix all of the ingredients in a sauce pan and cook over medium heat, stirring regularly, until it thickens.
2. Remove to jars and cool in the refrigerator overnight (the recipe makes enough for 2 or 3 large salads).
3. Boil the potatoes and the hard boiled eggs (separately, of course).
4. Remove both from heat and let them cool.
5. Cut the potatoes into small wedges, and place them in a large bowl.
6. Chop the celery, radishes and green onions and combine them with the potatoes.
7. Add and stir in the potato salad dressing until you achieve a nice, creamy texture.
8. Peel and slice the hard-boiled eggs and place them on top of the potato salad.
9. Sprinkle with paprika.
10. Cover and let chill in the refrigerator.
Finally, enjoy the potato salad as an accompaniment to a good meal! And thank my mom and my grandma for teaching me this exquisite recipe!
