The answer to this question is different for everyone for different reasons. It's best to look at the major drawing points and detractors of each film.
Episode one is the first chronologically so it answers several questions about the entire series. It is also the first prequel to benefit from modern special effects. On the other hand, despite decent performances by Liam Neeson and Ewan McCgregor, the dialogue and acting is atrocious at times
Episode two gives us our first glimpse of Anakin's descent into the dark side and shed's some light on what the clone wars were. It's also delves into the orgins of Boba Fett which I think is worth mentioning. Then again, the acting is only marginally better and the title alone seems to detract from the film.
Episode three is the only one to feature a PG-13 rating, reflecting it's darker and more violent content, which I think was executed well. Several pivotal moments in the story are to be had such as Palpatine's ascension, the orgin of Darth Vader, the fall of the Jedi, and the birth of Luke and Leia. I also like how the title vaguely resembles that of episode 6.
Episode four was the first released and set the standard for sci-fi in it's time. The only bad thing is that the effects are dated (even in the special edition), and the characters don't really seem to develop the depth that they need.
Episode five does an excellent job of bridging 4 and 6, and is seen by many as the most emotionally involving of the six films. Unfortunately though, it suffers the fate of all 2nd of 3 films in that it is unable to conclude properly.
Episode six is the action packed finale to the saga. I thought that the way they had the three battles (Endor Surface, Death Star, and Vader vs. Luke) worked very well. This would be my personal favorite if it wasn't for those Ewoks bringing such a large sense of kiddieness to it.
Everyone has their preference, but for me it's Episode 5 by a long shot (ironically, this is the only one Lucas didn't direct himself). It's definately the most emotionally charged of the six and better captures that dark and forboding feel better than episode 3 did.
