Recipes: Breakfast pizza

PIZZA FOR BREAKFAST?

Why not? This hearty breakfast pizza is ideal for a winter brunch, a potluck or a party!

INGREDIENTS:

Vegetable spray
1 package (about 30 ounces) frozen hash brown potatoes (diced or julienned)
1 jar (12 ounces) salsa
6 eggs
1 cup shredded cheddar cheese
Bacon bits (if desired)

(May substitute pizza sauce for salsa, if a tamer variety is desired.)

INSTRUCTIONS:

Coat a large frying pan or skillet with vegetable spray. Lightly brown frozen hash browns, forming them into a large patty as they thaw and heat through.

Mist a round pie plate or baking dish with vegetable spray. Carefully transfer hash brown patty into this pan. The potatoes will form the crust of your breakfast pizza.

Paint the top of this potato crust generously with the salsa of your choice.

In a small bowl, whip eggs until well blended.

Wipe inside of frying pan or skillet with a paper towel, Re-spray, if needed. Prepare scrambled eggs in this pan. Spread scrambled eggs onto potato crust, right on top of the salsa.

Sprinkle cheese and bacon bits on top for a delicious breakfast pizza.

Bake at 350 (F) for about 15 minutes, or until cheese melts and bubbles on top of the breakfast pizza. Cut it into wedges with a pizza wheel or sharp-toothed knife before serving.
