Four years ago while shopping for ingredients for Thanksgiving dinner, I ran across bags of fresh cranberries in the fruit section, and this is when it occurred to me that I could move on from my perfectly circular slices of cranberry flavored jellied stuff, and attempt to create my own delicious sauce. I added a little of this and a little of that and it turned out to be so delicious that I had to write down my recipe and use it every year from then on. The very moment I tasted it, the poor little cans of circular jellied stuff were no longer welcome in my shopping basket or in my home.
Cranberry-Apple-Spice Sauce
Ingredients:
1 bag of fresh cranberries
1 Granny Smith apple
1 cup of white granulated sugar
1 cup of water
1/2 cup of Port Wine (choose your favorite)
1 tsp cinnamon
1/2 tsp nutmeg
1 very small pinch (about 1/8 tsp) of clove
Instructions:
In a large sauce pan, add sugar and water over medium heat until sugar is dissolved. Add the entire bag of cranberries, and the Granny Smith apple- peeled, and chopped to about the size of the cranberries. Bring to a boil, and then simmer, uncovered for about 15 minutes, stirring occasionally. Then stir in the cinnamon, nutmeg, and clove, and simmer for about 5 more minutes. Remove the pan from the heat, stir in the Port Wine, and let it cool to room temperature. Can either be served this way or chilled.
This sauce is great by itself, but goes really well with turkey, and is very good on turkey sandwiches! Enjoy!
