These homemade sandwich-type cookies are ideal for bake sales. They can be individually wrapped in plastic wrap of packaged in small zipper plastic bags for easy handling and sale.
Whoopie Pies
1 cup shortening
2 cups sugar
2 eggs or 4 egg yolks
4 1/2 cups flour
2 teaspoon baking soda
1 cup water
1 cup cocoa
2 teaspoons vanilla
1 cup sour milk or buttermilk
Cream shortening and sugar together. Beat in Eggs. Add remaining ingredients and mix well. Drop by tablespoons on un-greased cookie sheet. Bake at 350 degrees for 10 minutes. Do not over-bake. Remove from cookie sheet and cool on wire rack. When cool, assemble two cookies, flat sides together with Whoopie Pie Filling (see recipe below) spread between. These can be wrapped individually in plastic wrap for school lunches!
Whoopie Pie Filling
2 egg whites
4 tablespoons sweet milk
4 tablespoons flour
2 tablespoons vanilla
1/2 teaspoon salt
4 cups powdered sugar
1 1/2 cup shortening (Crisco)
Beat egg whites until stiff. Add milk, flour, salt and 2 cups powdered sugar. Beat until creamy. Add Crisco and the rest of the powdered sugar and beat until creamy. Spread between two "Whoopie Cookies".
