As my long time love affair with buckeye balls is still going strong, I am proud to say this is my favorite treat of all time. I've been making these since I was a little kid every Christmas at my grandparents' house was scrumptious due to these little balls of heaven.
What you'll need:
4 - 16 ounce jars peanut butter
3 1/2 - 16 ounce - packages confectioners' sugar
1 cup butter, melted
3 - 12 ounce packages semi-sweet chocolate chips
2 tablespoons shortening
1. Mix the peanut butter, sugar and melted butter together in a large bowl and then let chill in the refrigerator.
2. Roll into 1 inch round balls and return to refrigerator. Obviously, you can make them any size you wish, but 1 inch balls are best because when you try to dip anything larger in the chocolate, it might fall off the toothpick!
3. In a double boiler over medium heat, melt the chocolate and shortening together. Whisk together until smooth. Be sure that the mix is smooth, as it will be most difficult to do your dipping with a lumpy mix!
4. Insert a toothpick into each ball, and dip them into the chocolate. You can cover them all the way to the top, or just cover them partially for the classic "buckeye" look. Place them on waxed paper and cool them in refrigerator. Then enjoy!
