Eco-tourism: Hotels go green

local streamlining of the produce and wines, to predominantly California locations, was an intentional move; designed to help in the reduction of carbon emissions created with the transportation of imported produce. A selection of imported produce is offered, however the list is small. The product benefits need to outweigh the negative environmental impact in order to make the cut. 'VeeV' is one such product:

"We have recently acquired a new organic liquor called VeeV which is made from the national fruit of Brazil, the acai berry, and grown in the Amazon."

By highlighting a product that can be sustainably derived from the Amazon, Roots hopes to raise awareness, and ultimately assist in the preservation of this natural wonder. This, they believe, outweighs the environmental impact of transporting this item from Brazil to San Francisco's customers.

Hotels from New York to London are incorporating innovative ideas into their operations and design, with The Muse in Manhattan using soy based ink on all it's correspondence - printed, naturally on recycled paper and The Zetter in Clerkenwell operating it's air conditioning system using water from it's own bores.
