Recipes: Breakfasts for those on the go

Breakfast Burrito

In the morning, you want a meal that is healthy, and fills you up! But when time is an issue, you don't always get the nutrition that you need. These burritos can be made in advance, and kept in the freezer, so all you have to do is microwave it and go.

Makes about 12

1 pkg of flour tortilla shells
1 dozen eggs
1 pound meat (bacon, sausage, ect.)


1 pound cheddar cheese, shredded
1/4 cup milk
Salt and Pepper to taste
(optional: finely chopped peppers, onions, or other veggies)

In a large frying pan, cook meat until done. Meanwhile, in a large bowl, beat eggs until well mixed. Add milk, salt and pepper, and mix again. Remove meat from pan and drain all grease. Cut meat up into small (less than bite size) chunks. Return the meat to the pan, and add eggs. (If you are using veggies, add them now also). Cook over medium heat, stirring often, until eggs are thoroughly cooked (like scrambled eggs). Remove from heat. On a clean, flat surface, place one warmed tortilla (*See NOTE below). Top with about two spoons full of egg and meat mixture. Sprinkle with cheese, and roll the tortilla into a burrito. Be sure to tuck the ends well, so that the contents do not spill out. Place in a freezer safe container or bag, and freeze for up to two months. You can also store them in the fridge for a couple of days. When you are ready to eat them, place them in the microwave for about 2 minutes (times will vary), or until they are hot, and cheese is melted. It's the super easy breakfast for someone to eat on the go, and it fills you up!

*How to prepare a warmed tortilla. Cover the tortillas with foil, and along with a large bowl of water - 'bake' them in a 250 degree oven for about thirty minutes, or until soft and pliable. Take them out one at a time to prepare burritos. Or you can put them in the microwave, one at a time for about fifteen seconds. Be sure to work quickly with your warmed tortilla. If you let them cool, they will harden, and will crack and tear when you try to roll them. If they DO harden (before filling with egg and meat), you can brush each side with a few sprinkles of water, and reheat for about ten seconds. *
