My signature dessert used to be Strawberries Grand Marnier. Then I developed a sensitivity to all types of alcohol. This Easter I played with my recipe to come up with a non alcoholic version. What could be better than homemade whipped cream over strawberries marinated in Grand Marnier, well as it turns out orange juice with a dash of dried orange peel also works very well. It is so simple and when served in crystal goblets very elegant. I decided to add angel food cake to the original recipe and it was an immediate hit.
Clean and slice 2 quarts of fresh strawberries. Put in a bowl and sprinkle with 2 tablespoons of sugar or Splenda if you prefer. Add 1/4 cup of orange juice (or 4 shots of grand Marnier), toss and cover bowl. Allow half an hour for the flavors in meld together.
Whip a pint of heavy cream add 1 tsp vanilla, 2 tablespoons of confectionery sugar and 1/4 tsp orange rind.
Take a store bought angel food cake and cut it into cubes or simply tear into pieces. Place a couple of pieces in the bottom of the goblet, pour about an inch of strawberries and juice over them. Repeat and then top with whipped cream. I usually get six servings.
To serve this as a strawberry shortcake just slice the angel food cake and spoon strawberries and whipped cream over for a casual and easy dessert any time of year. This also works very well with pound cake.
This is one of the easiest, most delicious desserts you will ever make. It takes strawberry shortcake to a whole new level of flavor. Somehow orange and stawberry are a very sophisticated combination and you will enjoy the rave reviews that you get.
