Chicken Diablo
This is one of my favorite recipes. It makes an excellent spicy pepper marinade for chicken. The recipe is to die for on the barbecue, but is also quite passable fried in garlic butter.
Ingredients:
2 tbsp olive oil
1/4 cup lemon juice
2 tbsp Dijon Mustard
1 tsp Tabasco Sauce (or other hot pepper sauce)
1/2 tsp Salt
1/2 tsp freshly ground Pepper
1/2 tsp dried Rosemary
1/4 tsp hot red chili flakes
1 chicken, cut into pieces (or equivalent amount of whatever cuts you like)
Instructions:
1. Combine the oil, lemon juice, mustard, Tabasco, salt, pepper, rosemary and chili flakes.
2. Rub mixture into chicken and marinade for 30 minutes (minimum, a few hours is better).
3. Cook the chicken, using the extra sauce to baste it periodically. As mentioned, it is best on the barbecue, but can also be fried in garlic butter over low-medium heat.
On the barbecue, nothing compliments this meal like a nice potato salad with radish, celery and green onion.
And to drink, a nice cold beer, of course!
