Since starting a work at home career I have found that being in all day not only drains away any creativity I have for meal making, but the cut in salary often makes a trip to the grocery a pain in the wallet. I have also attempted to balance feeding a family of five with making only one meal for dinner. Here I will detail my most cost effective meals that leave the family happy most days of the week.
Here are a few of my favorite and cheap things:
1. Chili: I have recently convinced my two and four year old to join my husband and my love of chili. It is easy to make with just a few cans of goods and can last for up to week. I like to make extra to freeze and have on hand.
2. Stew: Can be made with vegetable and lean ground or cubed meat. I like to use barley in my stew. It makes it hearty and adds a nice flavor and texture. Again, this meal can be doubled and frozen.
3. Spaghetti: A box of noodles and a bottle of sauce. You can't get any easier or cheaper than that. I like to butter plain noodles and add Parmesan cheese for the kids. They love it and it still keeps me from making them a separate meal.
4. Mini-do-it-yourself pizza: Generic biscuit dough, leftover spaghetti sauce and shredded cheese. If you end up with extra veggies or meats in the fridge you can add them as toppings. This is a good dinner to get the kids involved in. Allowing them to construct their own dinner may lead to them eating without question.
5. The ever popular "Kraft dinner": Mac and cheese and hot dogs (or spam), not my proudest moment, but a clear winner with children. Add a side of fruit and a nice glass of milk. You know we have all been there!
6. Soup and sandwiches: Both can be made from scratch and can be delicious. My favorite is chicken ginger soup with spinach and a BLT.
7. The Taco Bar: A family favorite in my house. Ground spiced beef, chopped lettuce, tomato and cheese. Another meal that is fun for the kids.
Start by planning a menu ahead of time. This will allow you to see how and where to stretch your dollar. Many items that can be made by doubling the recipe can serve as lunch the next day. The fact is many families can cut costs at the grocery but simply planning their meals in advance.
