The process of tipping can be many things. Personally, I have seen it be a complex ritual to a simple matter of adding the taxes. Every individual has their own process of figuring out the tip. However, I would like to say that too many people have no idea what is expected or common courtesy when it comes to tipping.
When a person goes out to a restaurant, by themselves or with a group, they are expecting a level of service. Sure, they are paying for their meal. They are also paying for someone to bring them that meal, their drinks, and to remove their plates. They are also expecting to be treated with great respect, which includes a server checking their level of happiness periodically, and dealing with any complaints or issues. The server is also expected to split checks for large tables in a very quick manner, while he or she is striving to give great service to everyone. Dealing with a large variety of personalities, many of which are unreasonable, and keeping a professional appearance and work ethic are expected of all servers.
Speaking as a server, you may think I have a biased opinion. However, I have been on both sides of the table and know I have an objective attitude with this subject. There are many different levels of service. Without going into great detail, the levels range from a server chewing gum and not even greeting you, to a polished individual who takes care of all your needs and more. The level of service and professionalism are very different, and ultimately the environment will be as well. However, you may find the bubblegum chewer in a high end restaurant, and the polished server in a run of the mill pub.
Where ever you are, you must take into consideration the attitude, skills, and ambition of the server. When they are making an honest effort, are pleasant, and do not make mistake after mistake, 15 % of the final bill is normal. If you see extra effort on their part, exceptional service, or are a high maintenance table, do not be afraid to reward them or tip extra for the special efforts. Not only will they appreciate your kindness, but you will be remembered and treated accordingly on your next visit.
At the other end of my previous thoughts, there are times when you do get a server who does not pay any attention to you, is unfriendly, and does not give a damn about you or your friends. I do not hesitate to tell you to hold back on the tip. Do not reward servers who give no effort. Not only does it undermine the hardworking servers, but it does not teach the bad ones any lessons. If the service is mediocre, tip mediocre. Please do not tip 15% all of the time.
Last but not least, I urge you to treat your server with the same respect you would give your coworker. You will definitely get better service and have a higher level of enjoyment. Cheers!
