Recipes: Authentic Italian pasta tomato sauce

This is an old authentic Italian gravy recipe that has been refined over many years.

A good size stock pot or soup pot should be used.

Ingredients:
4 cloves garlic
Oil (olive oil adds a rustic authentic flavor but any oil can be used)
1 small to medium onion
1 teaspoons salt
1 teaspoon peeper
2 tablespoons sugar,
Pinch of parsley
1 teaspoon Italian seasoning
2 32 oz. cans crushed tomatoes
4 6 oz. cans tomato paste
8 6 oz. cans water (2 cans of water for every can of paste)

Saut garlic in oil (enough oil to cover bottom of pan) on low heat.
After garlic is slightly brown remove from oil and add finely chopped small to medium onion, salt, pepper, sugar (important), parsley flakes, and Italian seasoning.
Stir and cook till onions are transparent.
Add crushed tomatoes, tomato paste and water.
Stir well and simmer over low fire.
Simmer for about 2 hours with periodic stirring.
If meatballs or other meat is added, this can be done after gravy is warm.
