spicy bean and veggie chili
I love beans and vegetables and lots of spices i have just made this for dinner this evening as I'm back on the weight watchers diet and needed something quick and easy and didn't have much in the cupboard be inventive and chuck in what ever veges you have. This is a great warming and filling meal.I had it with rice as this has a low GI which means it releases energy slowly into your body so you feel fuller for longer
ingredients
1 can of mixed beans in a spicy tomato sauce (if you cant find these you can just get a can of mixed beans and chuck in some tomato puree)
1 aubergine
1 green pepper
1 red onion
1 tin of chopped toms
1 fresh chili
Method
Fry the onions in some fry light or spray oil add the peppers and aubergine add the tin of beans and tomatoes and the fresh chilli's and leave to simmer for 20 minutes. Serve with rice and a sprinkle of low fat cheese or in a jacket potato.
