This salsa is delicious served with blackened paprika chicken and mustard mash.

Avocado, red onion and coriander salsa

ingredients

1 avocado
6 tomatoes
1 small red onion
1 yellow pepper (roasted and skinned)
fresh coriander
small red chili
fresh lemon juice

method
To roast the pepper hold it on a long handled fork over the gas ring till it goes black or put it in the oven and roast till black then place in a plastic sandwich bag whilst still hot and close it and shake it around for a few minutes. Take out of bag and peel of skin.
chop the avocado, tomatoes, onions and pepper very small.Place in a bowl and add the chopped coriander and chopped chili stir and add lemon juice.

To make the blackened chicken simply coat the chicken in paprika then place in a pan with very hot oil and fry till black on either side then place on a baking tray and finish in the oven.Makes a very simple meal
