Here are a few that are cheap, easy and sure to be a hit with your college friends.
Pizza buns- Get any kind of buns you like and cut them in half, seperating the tops from the bottoms. Smear on some spaghetti sauce and any kind of small, precooked sausage slices you like. Top with grated cheese and cook at 350 degrees until buns are crispy on the bottom and cheese is melted.
Grande nacho bake- It's best to use a disposable aluminum casserole pan, as they tend to be a little deeper than sturdy casserole pans. Start with a good layer of nacho chips. Add a layer of browned hamburger meat with taco seasoning mixed in. Add chopped veggies (peppers, onions, tomatoes, jalapeno, or whatever you like). Add some grated cheese. Then more nacho chips and repeat the steps until the casserole pan is mostly full. The very top layer should have more meat, toppings and cheese than the other layers. Bake it at 375 degrees until the cheese on top starts to brown. Use sour cream, salsa, nacho cheese dip, or guacamole as dip. Mmmmmmm.
Mock shephards pie- Brown 1 lb of lean ground beef. Add 1 package of brown gravy mix and 1/2 cup of water. When the pan is mostly dry at the bottom, dump the meat into a casserole dish. Add a layer of whatever vegetables you like, from frozen or canned. Corn, peas, diced carrots, onions, or mushrooms work best. Use combinations if you like. The top layer is mashed potatoes. Use some butter or milk in them to get them creamy and smooth. Add a little minced onion or chives to give it some texture. Spread the layer evenly and top with a bit of grated cheddar. Bake at 375-400 degrees, until a thin crust has started to form on top. Let stand 5 minutes and serve.
