This side dish is a welcome change from regular potatoes. Savory and creamy they are an excellent accompaniment to smoked meats such as ham and sausage. Baked fish, chicken and pork chops are all also complemented by their cheesy goodness.
six to eight medium potatoes
one small onion chopped
one clove garlic minced
parsley flakes
3 Tbsp. butter or margarine
1/2 tsp. salt
1/4 tsp. pepper
1 cup shredded cheddar cheese
2 1/2 cups milk
Grease a large baking dish with 1 Tbsp. of the butter or margarine.
Peel the potatoes and the onion and slice them thinly. Spread half of the potatoes in the bottom of the baking dish and top them with half of the onion and garlic. Sprinkle them with a bit of parsley, half of the salt, half of the pepper and half of the cheddar cheese.
Repeat with the second layer of ingredients in the same order.
Pour the milk over everything, cover and bake in a preheated 350F oven about one hour or until fork tender. Uncover the baking dish and bake an additional fifteen minutes or so, until golden.
Remove the baking dish from the oven and set aside to cool about ten minutes before serving.
You can vary the texture of the finished product by using other types of potatoes each time you make it.
Try adding different herbs to personalize it to your liking. Add 1 tsp. or so of your favorite herb in addition to or instead of the parsley. Herbes de Provence or Rosemary is an excellent choice because they go so well with potatoes.
