I'm one of four people living in this house-two of them children-and I'm the only vegetarian. Nevertheless, I do most of the cooking, and I don't cook meat. Like other parents I also have the sometimes onerous task of enticing my children into not just trying but *liking* vegetables. These "three easy pieces" of the vegetarian burrito set will have you and yours clamoring for more. Each serves at least 4 to 6, depending on your family and each person's size.
"Meaty" Vegetarian Burritos
Satisfy even your die-hard meat lovers with this recipe.
2 12 ounce packages Yves brand "Meatless Ground" (roughly equivalent to two pounds of ground beef, cooked)
1 medium to large yellow onion, diced
1 teaspoon crushed garlic
1 teaspoon olive oil
2 teaspoons chili powder
1 and 1/2 teaspoons cumin
1/2 teaspoon dried oregano
1/2 teaspoon paprika
salt to taste
optional: up to 1 teaspoon dried red pepper flakes
12 inch flour tortillas
Warm skillet over medium heat. (If you warm the skillet first before adding oil, it helps prevent food from sticking.) Add olive oil, and then onions. Saute onions until slightly browned. Add garlic, and cook for one or two minutes. Add Yves "Meatless Ground" with seasonings. Make sure you stir thoroughly to season evenly. The "meat" is already cooked through, so you are just heating it; no need to do any more than that.
Spoon "meat" onto a tortilla toward the South end. Add desired "fixings," see below. Fold West and East tortilla edges over "meat" and fixings. Roll toward North end of tortilla until burrito is closed.
"Fixings", whatever you like:
Shredded cheese
Sour cream
Sliced black olives
Chopped tomatoes
Sliced avocado or guacamole
Chopped lettuce
Whatever else you like!
Bean Burritos
(Traditional versions use refried beans which are high in fat. Instead, use whole beans. Canned beans are fine to use; just remember to drain and rinse the beans well before heating. You can even heat them in the microwave!)
2-3 12 ounce cans black or pinto beans
Salt to taste
Optional: pepper to taste
Optional: chili powder to taste
1 dozen 12 inch flour tortillas
"Fixings", whatever you like:
Shredded cheese
Sour cream
Sliced black olives
Chopped tomatoes
Sliced avocado or guacamole
Chopped lettuce
Whatever else you like!
Heat beans through, either in the microwave or using a skillet. Season with salt,
