How to throw a great Super Bowl party

Superbowl Sunday! Otherwise known as "National Snack Day!" The only thing you need for a great Superbowl party is a TV, great friends and a great menu. So, what's on the menu? Beer, of course. Cold, in a frosty football-themed mug and the following munchies close at hand. You also need to have plenty of other ice cold drinks for those who don't drink alcohol.

Here are a few suggestions for your Superbowl party:

Taquitas This makes enough for a very large party. Make them ahead of time because they freeze exceptionally well, then you can just pull them out and fry them up at will.

Meat/bean filling
10 pounds ground round
2 chopped onions
Minced Garlic
Oregano
Cumin
Chopped Tomatoes
Salt
Pepper
Approximately 7 1/2 pounds Refried Beans
1 cup of New Mexico extra hot red chile powder
2 1/2 pounds New Mexico extra hot chopped green chile

In a large pot, on medium heat brown meat with onions and garlic. When meat has browned turn heat down to simmer and add oregano, cumin, salt, pepper, tomatoes and chiles. Stir the beans in 4 or 5 large spoonfuls at a time mixing well between additions. When all the beans have been mixed in and added, let cool and return to refrigerator.

To put together taquitas

Generally this is done in assembly line fashion, 1 person frying tortillas, a person putting in the meat filling, another adding cheese and rolling and then maybe another wrapping in aluminum foil for freezing and keeping the count. The taquitas are stored wrapped in heavy duty aluminum foil, 1 dozen to a package. To reheat either refry them frozen in a little oil in a skillet or place on a non stick baking sheet in a 350 degree oven for approximately 30 minutes or until golden brown.

5-80 ct. corn tortillas
Approximately 1 1/2 quarts vegetable oil
Meat/bean filling
5 pounds fancy grated cheddar cheese
2 1/2 pounds fancy grated asadero cheese
Toothpicks

Mix the cheeses together. Fry the tortillas soft in oil, no more than a few seconds on each side. Place newspapers or paper towels on cookie sheets and between layers of fried tortillas to drain off excess oil. I usually fill one cookie sheet with 1-80 count package and then grab another cookie sheet sending off the other one to the family members that are filling.

In one fried tortilla place approximately 1 1/2 T. of meat/bean mixture spread across the bottom third of the tortilla, add approximately 1 T. cheese mix, roll tightly and secure with toothpick. Serve with green chile con queso and sour cream.
