Recipes: Bannock bread

I have a good friend who retired from the U.S.Postal Service and his kids were grown and he lost his wife . I guess he just got tired of people in general after working the window at the post office for thirty plus years. Any way he bought twenty acres about ten mile northeast of White Horse in the Yukon Territory. When I was in the Navy and coming back from Adak Island in Alaska a couple of us rented a car and drove down the Al-Can highway. We stopped to see him and one of the things he had was the authentic Cree Bannock Bread. It was so good I had to get the recipe so I could fix it when we got home.

NATIVE CREE BANNOCK BREAD

6 cups flour
1 cup lard (Can use Crisco but Lard is best)
3 tbsp baling powder
1 tbsp salt
2 cups currants or raisins
3 1/2 cups water

In a mixing bowl mix the flour and lard by hand. then add the baking powder, salt, and currants. Once this is done, add the water and work the ingredients into a dough. Preheat the oven to 425 F and spread the dough out into a 16" square cake pan. Cook for about 20 minutes or until golden brown.

This is awesome with some butter and good homemade preserves of some kind a a good fresh brewed cup of hot coffee.
