Guide to traditional Greek desserts and pastries

Greek cuisine is fast becoming an established menu of choice worldwide as their Mediterranean flavors with a slight Arabian influence impose on more traditional Italian fare. The Greek dessert too is becoming recognized for its contribution to the world of food and here are just two of the offerings they are famous for:

* Baklava
Possibly the most famous Greek dessert this is a delicious pastry that is packed with nutty textures and flavors. While it can be tricky to make a truly perfect baklava, the real difficulty with a baklava is that there are many different recipes on offer that reflect regional variations in how a baklava is made. But here is a basic guide to making a delicious baklava: first combine some walnuts with chopped almonds, sugar and a touch of cinnamon in a food blender to produce a fine mix. Place the mix onto philo pastry that has been cut into rectangles and then cover with more pastry that is well oiled and sprinkle the top with soda water. Bake in a warm oven until golden and serve hot.

* Kok
These immensely indulgent desserts are made with cake that encases a cream filling to give that well defined mix of flavors. To make some koks you need to first create the cake mix with sugar, egg yolks and a mix of flour and corn starch before adding the egg whites at the end. These almost cookie like cakes then need to be baked until golden and then left to cool. As they cool you can create the creamy filling from a mix of milk, cream, sugar and eggs that is boiled in a pan, once it begins to boil remove from the heat and whisk vigorously to a soft texture. Then you can either place the cream between two of your cakes or for a more indulgent taste scoop out a little cake from the center with a knife and fill with cream before replacing the cake to form a lid.
