Recipes: No-bake peanut butter cookies

Whether you love it crunchy or smooth - peanut butter can make quite the cookie. Growing up, we were all used to peanut butter sandwiches, but if you were really lucky, you got a peanut butter cookie in your lunch box. But how many recipes have you seen that make this tasty treat easy and un-baked? Well look no further, I have a recipe that really brings the peanuts out of the peanut butter!

Not only does this recipe contain loads of peanut butter, it also packs a load of crunchy roasted peanuts and rich chocolate cocoa. It's a chewy lip-smacking snack that will leave you with an empty cookie jar and a full tummy!



LIP-SMACKING PEANUT BUTTER CLUSTER COOKIES

INGREDIENTS:
2 1/2 cups White Sugar
3/4 cup Butter
3/4 cup Milk
1/2 cup Cocoa (sifted)
1/2 tsp Vanilla Extract
1 1/2 cups Peanut Butter
4 cups Quick Oats
1 cup Roasted Peanuts

DIRECTIONS:
1 Over medium heat, in a small saucepan combine white sugar, butter, cocoa and the milk. Bring to a boil for one full minute.
2 Remove from heat, and stir in vanilla and peanut butter.
3 In a large bowl, mix together the oats and roasted peanuts. Add the hot mixture from the saucepan and stir until combined.
4 Taking a large spoon, drop spoon fulls of the cookie dough onto parchment paper and let them cool.



A HELPFUL TIP WHEN BUYING PEANUTS:

* You never know how long those peanuts have been sitting on the shelf at the store, or in your cupboard. When using any sort of "roasted" or "toasted" nut, you can use the same process. Throw them on a cookie sheet or into a pan and roast them for a few minutes in the oven or on the stove. Watch them closely, as they will burn quick! Roasted them really brings out that inner nutty flavor!
