Tips for making the perfect cupcakes

Cupcakes are the perfect treat - "not too big and not too small, you can eat just one or you can scoff them all" as my Nan used to say. Whats more is that cupcakes are not only delicious to eat they are fun to make and actually quite simple, so they are the perfect introduction to cooking for children! The basic recipe for cupcakes is to sift some flour and baking powder into a bowl (the amount depending on how many you wish to make), then add butter and sugar to be creamed into the mix with a pinch or two of salt before beating in the eggs and milk with a touch of vanilla. It really is that simple. But then to get the most from your cupcakes there are a few top tips to consider when baking them to ensure a great result.

TIP ONE: PREHEAT
It is crucial to preheat not only the oven but the tray in which your cupcakes will be baked in. This will prevent a soggy effect and the danger of not cooking on the bottom while burning on the top.

TIP TWO: GET THE RIGHT CONSISTENCY
When making your mix try to achieve a consistency that will fall easily off a spoon but without being too runny. This will allow the mix to spread as they cook and thus create beautifully smooth tops to your cupcakes.

TIP THREE: TIMING
Most important with cupcakes is to keep an eye on them in the oven and time them to perfection. The aim is to remove them as they turn golden so that they do not burn. While timings in recipes are a good guide there is nothing better than keeping a watchful eye over your treats.

TIP FOUR: GET CREATIVE
The best thing with cupcakes is you can make so many varieties. Try using orange rind in the mix or choc chips. Then when it comes to decorating you can go wild and use a variety of flavored icings and toppings. I find the best and most fun is to use icing pens and draw or write on your cupcakes to give a personal message. This is ideal for kids too!
