Recipes: Scrambled eggs

Fancy a change from plain scrambled eggs? This recipe is the work of minutes and is a delicious variation on an old favorite. Light, flavorsome and moist, the only addition to the basic scrambled egg recipe you will need to make is feta cheese. The secret, however, is in how you cook it....

Ingredients (for one person):

3 eggs (separated)
1 oz butter
3oz of diced feta
freshly ground black pepper.

Heat butter in a pan until it sizzles, then melt in the feta. Carefully add the whites. Let them settle for a few seconds and then gently begin to stir them, fluffing them up as you do so. When you are happy they are cooked, add the yolks and mix into the white mixture, cooking for a few seconds more. Season with black pepper.

These eggs are delicious on hot wholegrain toast or with bacon. For a special occasion, add a little sliced smoke salmon at the end of the cooking process. You could even enjoy them by themselves!
