How to cook a London broil

"London Broil Beef Pasties a Denver Firefighters favorite"

My Grandfather was a Denver Fireman for almost 30 years before he retired in 1974. My grandfather taught me how to cook. I remembered growing up, riding my bike to the firehouse to see my grandfather, smelling all of the wonderful aromas coming out of the kitchen. As any one knows Firefighters are great cooks. My grandfather and grandmother raised all three of us girls the summers were full of Firefighters Conventions, Fireman Family Pot Luck Picnics and Barbeque's, my grandfather would do all of the cooking all of the cooking and I was right there helping and underfoot. I could not wait still summer when the Barbecue was cleaned up ready to go, we had wonderful new flavors and dishes like fresh rainbow trout,salmon, chicken, pork roast, hamburgers, brats, hot-dogs and new barbecue sauces.

I am old enough to remember that outdoor grill cooking did not take off until the late 50s and 60s. So if your thinking Barbecue has been around forever it hasn't only if you younger than 50. My grandfather friends were all firemen and they were your extended family. Even to this day I remember all of the station numbers 18,23,25 and 28's. The holidays were the best, it was reason to cook, celebrate, laugh and tell stories.

So,being it is, Jan. 2007 and a very cold out. Here is a favorite warm dish for winter and a having a toasty warm kitchen to cook in.

My Grandfather would make these Pasties at home and bake them and freeze them for later. Yummy!

Beef Pasties.

Ingredients 1/4 cup Shortening 1/4 Butter or Crisco to brown meat and ingredients 2 Tablespoons Flour, roll your cube beef in flour for browning

Pie Crust
3/4 cup Crisco shortening
2/3 Cup Milk or water for crust
4 Cups Flour

2 to 3 pounds London Broil or Tri Corner Sirloin Tip, cook to rare. I use Tri Corner Sirloin Tip, very tender nuggets, delicious! 4 med Potatoes Red Potatoes Finely diced and cubed with skin on or essentially small cubes!
Onions 1 Med Diced
Granddad preferred green onions chopped and white onions mix. Salt and pepper to taste
8 Teaspoons of Butter

So if you do not know what pasties are they are potpie with out an aluminum pie shell. What you will be doing is rolling out a pie crust to about 8 inches wide, filling the center with your browned pre cooked fillings and then you will pinch the top close to a circle with a hole the size of a quarter or
