Cake icing is, literally, the icing on the cake! There's a reason people use that old term. Cake frosting is really yummy, and tops off a delicious cake perfectly. There are tons of basic recipes that can be used for icing, and with just a little creativity and imagination, they all can be easily altered.
If you're going to go thru all the trouble of baking a cake, then you might as well finish off the task right with a yummy topping. But if you've already baked a cake, you probably don't want to go thru more bother with an elaborate frosting, so try these easy, basic cake icing recipes instead.
BASIC CREAM CHEESE ICING
1 package, 8oz, soft cream cheese
1 lb. box powdered sugar, which equals about 3 cups
1/2 c. butter, very soft
2 tsp. vanilla extract
1/2 tsp almond extract
tiny pinch salt
- Throw all the ingredients into a bowl and whip with electric mixer until creamy and smooth. Spread into cake and enjoy! Use food coloring to create any specific hues, or toss in some chopped nuts or shredded coconut.
- Jazz up the icing by reducing the vanilla to 1 tsp and using no almond extract, and instead add 2 Tbsp of orange, cranberry, or apple juice and a pinch of flour.
BASIC SUGAR ICING
3 cups powdered sugar
1/2 cup milk
1/4 cup very soft butter
1 and 1/2 tsp vanilla extract
tiny pinch salt
- Throw everything except the sugar into a bowl and mix well. Use an electric beater to slowly pour in the sugar, while mixing the icing. Make sure the frosting is smooth and creamy, spread on cake, and enjoy.
- This is another easily alterable recipe. Add some food coloring for that perfect matching tone, or throw in chopped nuts or shredded coconut.
- Drop down to 1/3 cup milk and add almond, orange, or cherry extract. Or try orange, cranberry, or apple juice. Any kind of strong, slightly sweetened cocoa powder can be thrown in to make simple chocolate icing.
BASIC CHEATER'S ICING
1/4 cup shredded coconut
1 tsp vanilla extract
3 cups, which is one container, "Cool Whip", any flavor
1/2 package pudding, chocolate or vanilla
1 tsp flour
2 Tbsp warm water
tiny pinch salt
- Throw everything into a bowl and gently mix very well, until there are no dry pockets and the "Cool Whip" has turned a uniform color. Spread on cake and enjoy. For neat alternatives, try adding sprinkles, candies, or nuts to the "Cool Whip" and create a really fun icing.
